COOKING

MAAS HEALTH BAARS
You may find that you want to 'tweak' this and add some of your own preferences.

* 1 egg
*1/3 cup of sugar
*1 tblsp golden syrup
*4 tblsps light margarine- melted
*2 tblsps skim milk
* 1 cup wholemeal sr flour
*3 cups muesli
*3/4 cup dried fruit- I used cranberries and dates. ( you can use sultana, raisins etc)
* cooking spray.

Preheat oven to 180c fan forced

In large mixing bowl beat egg and sugar for 30 seconds.
Blend golden syrup with margarine then add milk and combine.
Add flour, muesli and dried fruits and combine well.
Coat a slab tin with cooking spray, press mixture evenly over base of tin.
Bake for approx 30 mins.

I cut the segments before it goes into the oven, makes it easier to cut again when cooled.

* instead of muesli, you can use a favourite cereal.
* instead of the full egg, you can use just the white.





BULK PIKELET MIX
* 8 cups sr flour
*2 cups caster sugar
*2 teasp bi carb
*8 teasp no-egg, egg replacer
*2 cups milk powder

Mix together well.
Store in a sealed container in pantry.

To use:-
Combine 1 1/2 cups of mix to 1 cup of water.
Mix well till smooth. Add more water for a thinner batter

1 tbls=pikelet size.
2tbls= hotcake size.


* if you choose not to use the no-egg, add 1 egg to every 1 1/2 cups of dry mix.
* if you want a savoury mix, cut back on sugar and add, corn, cheese, herbs etc





EASY BANANA BREAD

3 ripe mashed bananas
1 cup brown sugar
4 tablsp melted butter
1 1/2 cups pl flour
1/2 tsp salt
1 tsp bi carb soda
2 eggs


Mash banana well - add sugar and eggs. Beat well
Add melted butter, flour mixed with soda and salt ( I used wholemeal flour- but you can use white flour if prefer)
Cook in loaf tin 180deg for 50 mins. Check that its cooked through by inserting a skewer.

It's a wet mixture-don't be alarmed. You can add some cinnamon if prefer.

I've been thinking of trying a little maple syrup in it or you could drizzle some over while warm as a dessert.
 
 
 

CINNAMON FRUIT LOAF




Make up a strong pot of plain black tea, enough to cover the dried fruit.


3 1/2 cups dried fruit - craisins, sultanas, raisins. (add peel if to your liking)
Pour the tea over the fruit and allow to soak for an hour.
Add large teaspoon of dried yeast to a cup of warm milk and 1 teaspoon sugar. ( Mix and allow to froth up.)


To make the dough, ( I mix by hand ) This is too big to bake in a bread maker.

4 cups white bread flour- reserve 1/2 cup to
1 teaspoon salt
¼ cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

add the prepared yeast mix
1 beaten egg
1/3 cup soft butter
Mix till just combined.

Strain the tea off the fruit and allow to drain, add the mix into the dough.
Mix till combined, then turn out onto a floured board and knead for approx. 15 mins

Place the dough into the greased ,floured pan. ( Can also be placed in a round tin)
Allow to rise in a warm place until the dough has doubled in size( this will take anywhere between 30 - 60 minutes).

Add nuts/seeds to the top if you wish.

Cook in a hot oven and bake on 180C (350F) for about 30 -40 minutes.

The loaf will sound hollow when you tap it when it's cooked.


This bread is delicious eaten straight out of the oven spread with butter. I also enjoyed it toasted ( sliced thick or thin )




QUICK BEEF CARBONNADE




700g new potatoes, cut into bite size pieces

1 kilo beef sirloin steak, cut into cubes

Freshly ground black pepper

Salt if desired

3 tblsp all purpose flour

2 tblsp dijon mustard

2 tblsp cooking oil

2 small onions

2 tblsp packed brown sugar

small bottle beer



Cook potatoes in 4 cups boiling water till tender(add salt if you prefer)

drain and set aside

Toss beef in flour, salt and pepper - set aside

In dutch oven, cook beef, half at a time, in hot oil, for 3 or 4 minutes per batch till well browned.

Remove beef and add onions to pan

Cook and stir for 5 minutes or until tender

Stir in brown sugar, beer and mustard

Bring to the boil

Add beef and potatoes, return to boil

Reduce heat, cover, and simmer for 3 minutes more.

Serve.






LEMON CURD


6 lemons, juiced
6 eggs
1 lb sugar
1/4 lb ( 110 -120gr) butter


*Beat eggs with sugar
*Melt butter in a saucepan, add eggs and sugar mixure
*Add lemon juice ( and grated rind of 1 lemon, optional)
*Cook on simmer heat till thick and coats spoon
stirring continuousy.

*Pour into hot sterilised jars and cool.

*Keep refrigerated



HOME MADE ICE CREAM


Caramel Icecream

1 tin chilled Carnation evaporated milk
3 tablespoons sugar
3 drops vanilla essence
1 teaspoon gelatine dissolved in a little hot water

Using a large bowl, beat evaporated milk until firm peaks form.
Gradually add sugar, beating well between each addition so sugar is dissolved.
Add gelatine slowly and mix well.
Add flavourings and mix by hand to distribute evenly through  the mixture.
Pour into a container or slice tray and freeze until set.

I make a golden syrup icecream and only add 2 tablespoons og sugar to the mix, and omit the vanilla essence.

Other flavours to consider- caramel, choc chip,  any berries or fruit , nuts.

*tip Make sure you disslove the gelatine by stirring well.

Very light and creamy. Taste test before freezing for sweetness
